A happy accident, Providence evolved out of experimental batches of a Tallegio style cheese Goat Lady Dairy made years ago, hence the square shape. It is an aged goat milk cheese with a natural rind. We allow the molds, yeast & bacteria native to our dairy to grow on the surface of this cheese. We mature the cheese for three months, brushing and turning them once a week, creating a stone-like exterior. Providence is the perfect table cheese with membrillo, cured meats or olives. You can use it as you would use Parmigiano Reggiano, Pecorino or Manchego.
