evolved out of an experimental Tallegio style cheese. It is an aged goat milk cheese with a natural rind and can be used as you would a Parmigiano Reggiano, Pecorino or Manchego.
Named after one of the first settlements in central North Carolina, Snow Camp is a mixed cow & goat milk bloomy rind cheese. Released at only two weeks, the cheese has lush cream-like and butter flavors that deepen as the cheese ripens.
Sandy Creek is an ash and mold ripened goat milk cheese with a distinctive layer of ash through the center representing the historic stream that flows by our farm. The ash encourages the growth of a unique mold rind with bright & grassy flavors.
Smokey Mountain Round
A Goat Lady Dairy original, our Smokey Mountain Round is hand formed in three formats, a 5 oz round, .50 lb log & .33 lb log. It is then dried and lightly smoked over apple wood, adding a nuanced bacon-like aroma & flavor.
Perfect for retailers, our chèvre logs come in two sizes, .33 lb logs & .50 lb logs. They are available in creamy classic and several unique flavors including Fig & Honey and Roasted Red Pepper.
Goat Lady Dairy offers two food service packs for retailers & restaurants, a 4 lb Tub and a 2 lb Log. They both are vacuum sealed with a ninety day shelf life, unopened.
We add easy-to-serve slices of chèvre to extra virgin olive oil infused in-house with a unique herb blend. The herbs and oil transform the chèvre into a complex and creamy snack or addition to your favorite salad or baked dish.
Compared to cow's milk products, such as cream cheese, goat cheese is lower in fat, calories and cholesterol. It also provides more calcium than cream cheese. Even though goat cheese has fewer calories, it has a full, rich and creamy flavor. Because of its special composition, goat milk and goat milk cheeses are easily digested. Our cheeses are all natural with no artificial additives or preservatives.
